It is very attractive, in spite of the expense, however, I have a need to know one specific detail before I buy (invest). There is increasing evidence (SCIENCE NEWS Vol. 124, No. 14, OCT. 1, l983) that aluminum can accumulate in the brain and cause several kinds of dementia, including senile type. Aluminum cookware is one of many sources for getting aluminum into the body. My question is obviously: how does this apply to calphalon which is an anodized aluminum, essentially aluminum oxide?
