A "classic" strict vegetarian cookbook is "Ten Talents".  I can't remember
the author's name, but you should have no trouble finding it.  It contains
a wealth of basic information for the vegetarian, including many recipes
of non-dairy substitutes for ingredients of "conventional" recipes.  And the
recipes are very good tasting, though some require considerable preparation.
