Cocoa is chocolate with some of the fat removed, pulverized. Carob is another plant altogether. I'm not sure why carob is touted as a "natural" substiture for chocolate; I do believe carob confections have less calories than chocolate confections (less sugar needed for equivilent sweetness and/or fewer calories in the carob than in the chocolate?). -- K.
