If you eat commercial beef, you're getting oodles and oodles of
lovely hormones and chemicals.  You are also getting gobs of FAT!

The general run of chemicals that get out into the environment are
either fat soluble or water soluble.  If the chemical that Bambi ate
was water soluble, it's gone, since the deer has already peed it
out.  If its fat soluble, the amount of fat in game flesh (deer and 
elk, primarily) is just under 5% by weight.  The amount of fat in
commercial beef is OVER 25%!  The cuts of venison and elk that you
eat have incredibly tiny amounts of fat in them, especially in
comparison with the standard store-bought sirloin steak (how's that
for alliteration?).

Considering what they feed beef cattle, you are better off eating
game.  It's low in fat and low in cholesterol.  In fact, I know
someone with multiple sclerosis, and her doctor doesn't allow her to
eat beef, but ENCOURAGES her to eat game. (They even have a special
permit to get road killed game if the rangers get to it within the
day.) 

There are some considerations with game.  Venison can't be eaten
rare, due to possible parasites (roundworm) the deer picked up while
browsing.  Elk eats the same thing cattle eat, so elk can be eaten 
the same way you eat beef. All game should be aged about a week, however,
otherwise it'll give you the runs.  

So, unless you grow your own beef and can oversee the feeding of the
critters, game is your best bet if you must eat red meat.
