First, your string doesn't work with standard UNIX shells.

Second, you don't need an "echo", the shell will cheerfully print
the string itself. Try:

	$ PS1='o   o
	>   V
	> ___
	> ready> '

	|
	\--- the ">" is PS2, let's you know quote isn't finished yet.
