The crumbled bits of bacon are a usual ingredient of spinach salads (common spinach salad == spinach, crumbled hard-cooked egg, & crumbled bacon; crumbled walnuts are a nice addition, or a substitute for the bacon, for those of us who keep kosher and/or are vegetarians). The dressing usually used on spinach salads is a basic vinaigrette dressing. Any good cookbook should have a recipe for vinaigrette, especially a cookbook with a French slant to it.
