Ice 9's crystalization structure is stable throughout the spectrum of temperatures we experience here on Earth. When, towards the end of the story, the ice 9 is dumped into the ocean, (you guessed it) the crystal fed upon itself and froze every drop of water in the world. A rather interesting concept.
