I think you should just tell her that you are not interested in any
long term commitments, but that you like her, and enjoy her company
and would like to get to know her better.  College is a great time
to meet lots of people.  Very seriously, I think that the more
people you have dated and gotten to know, the better your chances of
finding the "right" person.  Also, you will have had the opportunity
of knowing many different people with many interests.
