Some other minor benefits: When I ate meat I often would get very heavy feelings in my stomach after a steak or whatever, leaving me inclined to recline for an hour or so. There seem to be very few veggie meals that will wipe me out that way. I never need a cutting knife at the table; a fork will do. The pans are ALWAYS easier to clean out afterwards. I NEVER get tempted to go to McDonalds and junk out.
