Aftermarket A/C cutouts are available for retrofitting to most vehicles.
These typically sense a change in manifold vacuum (caused by acceleration)
and shut off the compressor.  I know they can't be used on rotaries;
I'm not sure if they're available for diesels or not.  Cost is around
$20 - $30; BTW, they're about the only aftermarket devices considered
as true fuel-savers by the EPA!
