I just lay one tortilla at a time on it, wait a few seconds, turn it over, spread some butter on it (the steam will melt the butter nicely), and then heap the ingredients on it while its still on the screen. The tortilla doesn't stick to the wire screen much, and the steam even cleans the accumulated grease out of the wire screen that got put there when I cooked the filling.
