My understanding is that the Christian priests/missionaries couldn't quite get the pagans of "Britain" to buy into totally renouncing the old ways, so they moved a couple celebrations to match up with the pagan holidays. Besides, shepherds didn't watch the flocks at night in December. They watched them in the early Spring during (or is it just after) lambing to keep the predators away.
