[Chag Pesach]

I am aware that Israeli Jews only celebrate one Passover Seder, 
while other Jews, except Reform, celebrate two seders.
I beleive this has something to do with us not being sure
of the exact beginning of Pesach.  Could anyone enlighten
me?

Also, are their any restaurants in, or around New York City that
are Kosher for Passover.
