The shish-kabob without the meat is fine, but it can be improved with the addition of pieces of tofu that have been frozen, and thawed, and then marinated is some soy sauce based liquid. Yummy! 2. Also possible is barbequeing rather fat slices of potato. Friends of mine in Vermont used to do this (although they were not vegetarians), and they used the milk solid remains of clarified butter as basting. Many things can be brushed on, of course.
