Lines: 27 Potato salad is very simpleand refreshing in the summer. You need some cold boiled potatos - best if they are "new", and certainly not overcooked, otherwise they simply break up. A small onion, finely chopped. A couple of tasty (tangy) eating apples Mayonnaise, preferably home made because a) it tastes better, and b) it tends to be a little runnier (at least mine does!) The method: Dice potatoes into 1/2" cubes and dice the apples a little smaller. Mix the onions, potato and apple together in a bowl with enough mayonaise to coat everything and make it stick together in the time honored fashion. Thats about it. Hints: 1. it helps to chill the ingredients first because the apples go brownish if left standing. This way you can make it a few minutes before serving. 2. smear a cut clove of garlic around the bowl to give it that extra sparkle of flavour. 3. garnish with fresh parsley or chives. 4. save some for me!
