There is a restaurant back home that makes "Nachos with Spiced Chicken"
that is really good. Only, they won't give away their recipe for obvious
reasons.

Does anyone know anything about such a beast? The chicken had been boiled
and some "mild" spices added, but I don't have the experience (not to 
mention the stomach) to try to recreate it with nothing to start with.

If you can provide me with the chicken, the rest is easy.
