Surely, a race as powerful as the Organians (being able to disable
ships at incredible distances instantly, etc.) would be avle to 
locate and stop a genesis like weapon well before it hit them.
Even if it did hit their planet, you must remember that they are
not physical beings but, I belive they were said to have evolved
into a form of living energy, and I don't think genisis could
hurt them. If I remember correctly, the Organians disappeared 
mysteriously (I think this was in one of the books) for a number
of years, and hostilities broke out again. This could happen in
ST IV. In any event, I don't know and its not good to speculate
too much
