MELT IN YOUR MOUTH BLUEBERRY CAKE (Old Fashioned) 2 eggs - separated Norma Lancaster 1 cup sugar Bangor, Maine 1/2 cup shortening 1/4 tsp. salt 1 tsp. vanilla 1 1/2 cup flour 1 tsp. baking powder 1/3 cup milk 1 1/2 cup blueberries -Beat egg whites till stiff. Add 1/4 cup sugar. Cream shortening. Add salt and vanilla. Add remainder sugar. Add egg yolks. Beat until light and creamy. -Sift flour and baking powder. Add alternately to creamed mixture with milk. -Fold in egg-white mixture, then blueberries (add 1 tbsp. flour to lightly coat them first). -Turn into 8x8 well-greased pan. Sprinkle top lightly with granulated sugar. -Bake at 350 degrees for about 50 minutes. (Have also tried sugar mixed with grated orange peel.) Submitted by Ed Baldwin, Burlington, N.C.
