There are also one or two momentary-contact pushbuttons. The connections that need to be made to the joystick connector or peripheral DIP socket are described in the Apple II technical reference manual. You would be better off buying a joystick (both Apple and Kraft make good ones) unless you just like to work with mechanical widgets.
