Highly recommended:

Mastering the Art of French Cooking
	Volume One:  Julia Child, Louisette Bertholle, Simone Beck
	Volume Two:  Julia Child, Simone Beck
both from Alfred Knopf publisher, about 1970.  These are particularly good
because they contain not just recipes but many articles on techniques.
