If you want my recommendation, do the following:

1.	Bake the confection.
2.	Cut into squares 2-2/3 inches.
3.	Notice this produces nine.
4.	Enjoy one yourself.
5.	BINGO!  Eight squares, as specified.

	Presuming the outcome of step 1 is of reasonable quality, the
above is clearly more enjoyable than haggling over the geometry involved.
I think.

(Note: if you don't want my recommendation, do the above.  Anyway.)
