Estimated preparation time: 1/2 hour Estimated cooking time: 1 hour Basic Quiche Recipe: 1 partially baked pie crust 9 inch 3 eggs 1- 1/2 cup veggies, meat or fish 1/2 lb cheese - gruyere is best, swiss is ok - cut in 1/4 inch cubes 1 cup lite cream about 2 Tb grated parmesan and/or romano nutmeg, salt, pepper other spices to taste Basic Quiche Instructions: Preheat oven to 425 Mix veggies with swiss cheese Put in bottom of pie crust Sprinkle with parmesan cheese Beat eggs with cream and seasonings Pour mixture into pie crust - dont overflow! Bake at 425 for 15 minutes Reduce heat to 350 and bake about 40 more -until top is golden brown LET SIT 5 minutes at least before serving Example Quiche Variations: Lorraine: Cook maybe 6 slices bacon till crisp. Saute 1 onion in bacon fat and drain all very well. Use this for the filling (1 - 1/2 cup veggies, meat or fish) Crab: Mix maybe 1/4 - 1/2 lb crab with green onions sauted in butter for the filling.
