Chicago - Computation Center Lines: 14 This is how my grandmother made calzones. However, she never used recipes for anything, so it's sort of rough. The dough is a basic pizza dough. Cut it into small pieces that can be rolled out into 6 inch circles (about 1/2 in thick). In the center of the dough put a dollup of ricotta that has been mixed with egg, salt, pepper, grated parmesan, and cubed mozzarella. On top of that put a slice or two of prosciutto (ham if you're on a budget). Fold over the dough and pinch the edge closed tightly. Brush with beaten egg. Then bake on a greased cookie sheet until nicely browned (about 20-30 min at 450).
