For one thing, Kirk loses to Spock in "The Paradise Syndrome;" not a good way to prove how awesome a fighter Kirk is. "Space Seed" is not too different, Kirk is losing there too, but I guess that we have to give him credit for thinking far enough ahead to put those styrofoam crowbars into Engineering just in case he needed them (why else would those things be there :->). I am most impressed with the "confrontation" scenes in which Kirk displays true fighting skill and cleverness, not just the ability to effectively use a weapon.
