There is no problem in loading down the Atari Computers Video
outputs by using 2 or even 3 monitors. Remeber the outputs
for Composite Video (Color), Composite Lum. (B/W) and TV are from
separate sources. Also I think each one of these outputs is robust enough
to handle a couple of monitors on each of them all at once for a
total of six displays at the same time.
