No. There is a famous sf short story by Damon Knight called "Not With
a Bang" in which the last man on earth tries to get the last woman on
earth to marry him.  I have seen it in many anthologies.

I can't remember any stories about a giant hand snuffing the sun -
"The Nine Billion Names of God" comes closest.
