That's the way my party did it.  Actually, we stumbled onto one and 
nearly lost two party members before we got out of there--doing only
a small bit of damage to the beholder in the process.

But then we regrouped, and went in again--better prepared this time.
One of our mages "invisibled" the hack-and-slash types, and wearing
the sum total of the party's Elven boots (3 pairs, I believe), they
positioned themselves around and underneath the beast.  The magic-users
then lead a frontal assault/diversion while all the fighters did heavy
damage before they "reappeared".  By then the result was academic.
