Here is how your luck changes (from looking in source code):

throwing a KNOWN valuable gem at a unicorn: +5 luck
 "    an unknown ""        "  "  "   "    : +1 luck
eating a human: 			    -2 luck
eating a tamed or peaceful animal:	    -1 luck
eating unicorn flesh (you fool!!!):         -5 luck
full moon "you feel lucky tonight...":	    +1 luck
killing a blinded floating eye(sometimes):  -1 luck

Some side notes......   Naming your weapon "Orcrist" only seems to help
if your weapon is a TWO-HANDED SWORD, so a +6 mace named Orcrist is 
the same as a +6 mace. 
	And finally, cloves of garlic are good to wield against undead.
(A ghost is NOT an undead monster!)
