My mother regularly made root beer some 30+ years ago, when I was very young; it was, in fact, the only carbonated beverage I remember from those early years. Mom always bottled it in canning jars (the type with the glass lids and wire bales). I don't know if this type of bottling is more hazardous than regular capped bottles (I do remember an occasional accident), but this might be an alternative for people who have canning jars and don't want to invest in a capper. I think I'm going to look for extract when I go shopping this week... Linda Dube
