These are the French- Canadian potato-pork dumplings (a piece of fatty pork in the center with a potato dumpling around it). I have had these pre-prepared (out of a can), but would like to try them from scratch. Also, are there any Czech cooks out there? A Czech friend of mine in Oregon makes a wonderful "buchty" with the lightest dough (that, of course, she makes by throwing in a little of this and a lot of that...). The buchty that she makes is spread in a pan with fresh plums and streusel topping over it. What I need is the dough recipe. I have a Czech cookbook (by Joza Brizova) and a Eastern European cookbook, but the doughs are too heavy.
