If you don't want to surround the finished product with strawberry puree, 2 cups of berries will approximately provide the 1 cup of puree required for the recipe. If you want to add some extra puree to the recipe, feel free to -- it won't ruin it. Enjoy. Note: This recipe works well with fresh or frozen berries. --- STRAWBERRY DELIGHT 1 quart. (4 cups) strawberries 4 eggs yolks 1/2 cup sugar 2 tsp. corn starch 1-1/2 cups milk 1 envelope unflavoured gelatin 1/4 cup lime juice 4 egg whites 1/4 cup sugar 1/2 cup whipping cream, stiffly beaten Puree the strawberries in a blender or pass through a sieve. Set aside. In a medium size bowl, beat egg yolks and 1/2 cup sugar until creamy and light. Beat in cornstarch. Heat milk and slowly whisk into egg yolk mixture. Return to saucepan and cook, stirring constantly over medium heat until sauce is heated and slightly thickened. Do not boil. Sprinkle gelatin over lime juice, stir to combine, then beat softened gelatin into hot sauce. Add 1 cup fruit puree, refrigerate the remainder. Beat egg whites with 1/4 cup sugar until stiff and fold into sauce. Refrigerate until cool and slightly set. Fold in whipped cream, and pour into an 8 cup mold. Cover and regrigerate for several hours or overnight until set. Unmold onto a serving plate.
