Texas, Astronomy, Austin, TX Lines: 19 Ice down 1/2 & 1/2 of soy sauce (eg. Kikkoman, not as salty as some others) and water, total volume of 1/2 cup, Slice ginger along the grain both ways into very fine matchssticks, 1/2" long or more, chop up green spring onions with fine transverse sections, add to the ice cold mix. Cut fresh (very important!) cold tofu up unto 3/4" cubes, keeping the block intact. Try rhomboids instead of squares for aesthetic reasons. Place a ~3x4x2 (inches) chunk of tofu in a flat-bottomed bowl (cereal bowl) and pour the sauce over it, chuck in a few ice cubes in the sides of the bowl. Eat on a hot day (perhaps with some rice and seaweed squares).
