Research shows that it is not the visible mold that we need fear, but the spores that are the unseen villians. Mold has spores (like roots on a plant). Even though you may cut the mold off the cheese the spores remain thus presenting the problem. Cancer research, at this point in time, is theorizing that this may contribute to the development of cancer. Besides, eating something with mold on it (even though it has been cut away) sounds a bit revolting.
