One way of doing Zone System photography with 35mm systems is to carry
around lots of bodies. Use one for +1, another for +2, another for -1,
etc. :-)

A good compromise is to place the dark tones where you want them, and
keep track of what development you would use for each shot. When you
develop that roll you pick the time that will allow you to cover the
different contrast ranges by using different grades of paper. This
works out very nicely most of time.
