How about lentil stew over scalloped potatoes? No refrigeration reqd, it
all comes out of boxes/packets which have instructions on them, but note
that lentils must be soaked for a few hours or boiled for about an hour.
(Since I'm a canoeist, not a hiker, or, God forbid, an RV traveller, the
soaking option is an easy one.)
