My mother, who would make a thing from scratch if that was really better,
just uses cornmeal muffin mix for her "corncakes".  They are yummy.
They burn faster than pancake batter so you have to stand over the griddle.
(As for the locale of this dish, we came from Ohio originally which doesn't
prove anything.  I would guess they are more southern than anything else.)
