The best variant of risk that i've ever played
(and still play) is "drink risk". Basically, you take a 
large drink of beer (or other beverage) whenever you conquer a
country. It changes the strategy alot, since you're more concerned
with drinking than winning (or esle you wouldn't play this
variant)
