There are a wide variety of alternatives. There is tofu, milk, yogurt, and the proper combination of whole grains, nuts, legumes with milk, etc. Two very good books using such recipes are Nikki and David Goldberg's Wholefoods Cookbook (not sure on the exact title) and a book by the New York Times, _Natural _Foods (or something like that). These books also have recipes that use little or no sugar (honey, molasses, brown sugar) and they use whole grains and 'natural foods'. Some recipes for muffins may be useful to you because they do not contain yeast and they are portable (as well as delicious!).
