I found out the hard way (when I substituted kiwis for peaches in a cream pie) that there's some horrible enzymatic reaction between kiwis and dairy products if they stay in contact for very long or are baked together, so a garnish like the above should be added at the last minute. (It doesn't "spoil", it produces a truly EEECHHHHHHH taste and smell.) Something or other will disable the enzyme, maybe canning, I don't remember. Brought to you by Super Global Mega Corp .com
