Heat oven to 325 degrees. In medium-size bowl combine flour, sugar, cornstarch and salt. With fork or wire whisk beat in melted butter, egg whites, milk and almond extract until batter is smooth. Drop batter, 1 tablespoon at a time, onto buttered, heavy non-stick baking sheet. (If necessary, place two thin baking sheets together to make one heavy baking sheet.) Space batter 3 inches apart; batter will spread while baking. Baking sheet should contain 4 cookies ONLY. Bake 8 to 10 minutes on center oven rack until cookie edges are golden brown. 2. With large metal spatula, working quickly, remove cookies from baking sheet. Gently slip onto clean, smooth kitchen towel or large cloth\ napkin. 3. Place one fortune paper in center of each WARM cookie. QUICKLY fold each cookie in half, pressing edges to seal. For beautiful cookies it is important for them to be warm and pliable while folding and shaping. Speed is essential throughout the entire process of making fortune cookies. 4. Immediately fold one cookie over edge of bowl starting with the longest side of folded cookie against the rim of the bowl. Press about 30 seconds until cookie holds its shape. Repeat with remaining 3 cookies. Bake and shape remaining cookies, making not more than 4 at a time. Makes 24 cookies. Per cookie: 44 calories, l gram protein, 2 grams fat, 5 grams carbohydrates. Note: The secret to making these favorite cookies is SPEED. Have everything ready before you begin. At first, bake 2 cookies at a time. As you expertise increases, bake in bathches of 4. If by chance 1 or 2 cookies cool and crisp before being shaped, serve as brown-edge butter wafers with ice cream. (Taken from August 1985 issue of REDBOOK magazine.
