I've found that the best way to make Bleu Cheese Salad Dressing is to dress the salad with oil and something to cut it (corn oil and lemon juice combine well), and crumble bleu cheese onto it. Tastes better than any other way you could use the cheese. _Don't_ use the pre-crumbled stuff!
