The sequel to the Moosewood cookbook is called THE ENCHANTED
BROCCOLI FOREST, after the recipe which is illustrated on the cover.
I second the recommendations for these cookbooks; although I'm not a
vegetarian I find these recipes make meals that are quite satisfying.
