Because you can't get SmallTalk (if you ever considered UNIX to be a resource hog, have a look at SmallTalk some time), and the Mac user interface is running on a horrid CP/M-like operating system. UNIX is an excellent base to build all sorts of special-purpose systems: it's small & fast, expert friendly (remember, someone has to write the user friendly interface), and widely available.
