We have done our turkey on the Weber for 3 years, and it has always been perfect. I just follow the instructions that came with the Weber (rub turkey inside and out with oil, stuff, etc) and put it in. I have to add more coals every hour to keep the fire going. I never put on the aluminum tent. The skin always turns out crisp and brown, and I am a skin person (no flames about fat please).
