I got some mail requesting that I repost my Pumpkin Chip Cake recipe (with credit to my cousin, Nikki Plaut) PUMPKIN CHIP CAKE 4 eggs 1 small can of pumpkin, or half a large one (NOT pie filling) 1 cup oil 2 cups sugar 3 cups flour 2 tsp baking soda 2 tsp baking powder 1 tsp cinnamon 6 oz chocolate chips 1/2 cup chopped nuts Combine all ingredients, using the order specified by your method of implementation (I used a food processor). There's quite a bit of batter, so use a very large bowl. Bake in a large tube pan at 350 F for 1 to 1 1/4 hours. Use the toothpick test to make sure the cake is done - the only thing that should come off on the toothpick is melted chocolate, not batter. Melt another 6 oz of chocolate chips and drizzle over cake, if you desire. The cake is pretty rich. Enjoy! Susan attunix!sftig!susan
