I said I would look up his reason in my notes and finally found those notes. He said that according to recent data, disaccharides promote the synthesis of triglycerides, which are a factor in cardiovascular disease. Mono- and polysaccharides do not have this effect. I'm sorry that's all I have on it--it was not a formal, scholarly lecture but a nutritional overview for a nontechnical audience.
