I know of one place.  I suspect there are others.

I don't know how far north you were looking for but I presume you
can pass through Madison from most places in central NJ.

I imagine other outdoor/backpacking-type stores will rent also.
Check the yellow pages in the areas you're interested in.

PS-I have no connection with the Wilderness Shop other
than as a satisfied customer.  I have never rented
cross-country ski equipment or any other equipment from
them.  I have purchased clothing and equipment from them
and havee been satisfied with the goods and the service.
