I don't have the time patience or facilities (meaning no kitchen in my little room/bathroom that I live in) to cook often. Chicken would probably be my best bet, because I cook in in a semi-original way. (cut up boneless breasts into strips, sautee with veggies and rice)...better than just frying legs, or something. That way I'm keeping to my ability, without appearing to be trying TOO hard (i.e, spending 5 hours cooking appetizers, fixing salad, preparing main course and dessert) and showing a little flare with ingenuity.
