Experienced People's flyers bring their own food, and try not to have to check more than 1 bag (none if possible). Almost all airlines charge for headphones. Their basic idea is to provide inexpensive (cheap?) transportation, without making everybody pay for other people's services (i.e. checking baggage). If I carry my bag on, why should I pay for you to check yours. Besides, these charges are not secrets. The food charges are clearly laid out on a menu in the seat pocket in front of you. The baggage charge is well-known. And, they are known for not being 100% accurate with their departure times. They don't try to mislead anyone. This is how they do business. If you want what you are used to, fly United. Just be prepared to pay for it. Me, I'll fly to Boston for $39, stash my overnight bag under the seat, and bring a sandwich and my Walkman along, and be just fine, thank you.
