The book "Applied Concepts in Microcomputer Graphics" by Bruce A. Artwick (Prentice Hall) has a whole chapter dedicated to mucking around with display generation hardware. In particular, on page 93 it gives two diagrammes for implementing RGB to colour conversion for standard and simplified computer graphics applications. This book is available in most book shops with a "computer reference" section, and through many computer book clubs. I don't know the publisher's price, but if you belong to one of these book clubs, or about to join, you may get it for a few bucks. (I got it for less than $6).
